Ingredients

  • 1 (5 lb) ribeye roast or prime rib
  • 4 cloves garlic, crushed
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 4 large eggs
  • 1/4 cup beef drippings or vegetable oil
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 450°F (230°C) for the first phase of cooking the beef.
  2. Prepare the beef: Pat the ribeye roast dry with paper towels. Rub the entire surface with olive oil, crushed garlic, chopped rosemary, salt, and black pepper.
  3. Roast the beef: Place the beef on a rack in a roasting pan. Roast for 15 minutes at 450°F (230°C) to create a crust.
  4. Lower the temperature to 350°F (175°C). Continue roasting the beef for 1.5 to 2 hours, depending on your desired doneness.
  5. Check the temperature: Use a meat thermometer to check the internal temperature:
    • 125°F (52°C) for rare
    • 135°F (57°C) for medium-rare
    • 145°F (63°C) for medium
  6. Rest the beef: Remove the roast from the oven and let it rest for 15-20 minutes before slicing.
  7. Make the batter: In a bowl, whisk together 1 cup flour, 1 cup milk, 4 eggs, and 1/4 teaspoon salt until smooth. Let the batter rest for 15 minutes at room temperature.
  8. Preheat the tin: Add beef drippings (or vegetable oil) to a muffin tin or Yorkshire pudding tin. Place the tin in the oven for 10 minutes at 450°F (230°C), or until the oil is smoking hot.
  9. Pour the batter: Once the tin is hot, carefully pour the rested batter into the hot oil, filling each cup about halfway.
  10. Bake the puddings: Bake for 20-25 minutes at 450°F (230°C), or until the Yorkshire puddings are puffed up and golden brown.
  11. Serve immediately: Remove the Yorkshire puddings from the oven and serve them right away with the roast beef.

Serving Suggestions

Serve the roast beef with garlic mashed potatoes, gravy, and roasted vegetables like carrots and brussels sprouts. For a classic Christmas touch, add cranberry sauce and stuffing.
