Ingredients
- 1 (5 lb) ribeye roast or prime rib
- 4 cloves garlic, crushed
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- 1 cup all-purpose flour
- 1 cup whole milk
- 4 large eggs
- 1/4 cup beef drippings or vegetable oil
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 450°F (230°C) for the first phase of cooking the beef.
- Prepare the beef: Pat the ribeye roast dry with paper towels. Rub the entire surface with olive oil, crushed garlic, chopped rosemary, salt, and black pepper.
- Roast the beef: Place the beef on a rack in a roasting pan. Roast for 15 minutes at 450°F (230°C) to create a crust.
- Lower the temperature to 350°F (175°C). Continue roasting the beef for 1.5 to 2 hours, depending on your desired doneness.
- Check the temperature: Use a meat thermometer to check the internal temperature:
- 125°F (52°C) for rare
- 135°F (57°C) for medium-rare
- 145°F (63°C) for medium
- Rest the beef: Remove the roast from the oven and let it rest for 15-20 minutes before slicing.
- Make the batter: In a bowl, whisk together 1 cup flour, 1 cup milk, 4 eggs, and 1/4 teaspoon salt until smooth. Let the batter rest for 15 minutes at room temperature.
- Preheat the tin: Add beef drippings (or vegetable oil) to a muffin tin or Yorkshire pudding tin. Place the tin in the oven for 10 minutes at 450°F (230°C), or until the oil is smoking hot.
- Pour the batter: Once the tin is hot, carefully pour the rested batter into the hot oil, filling each cup about halfway.
- Bake the puddings: Bake for 20-25 minutes at 450°F (230°C), or until the Yorkshire puddings are puffed up and golden brown.
- Serve immediately: Remove the Yorkshire puddings from the oven and serve them right away with the roast beef.
